What is the difference between z3 and z3m?

Body styling, the M roadster front and rear bumpers are different, the gills on the fenders as well, wheel offsets and widths. What "M" parts do you want and what are you going to put them on?

is the rear brake flange to flange width on an M narrower to allow the wider wheels, or is the difference just in what the body will allow? i've always been told the M rear wheels won't fit my 96 and probably not the 97? i would need 4 front wheels to fit all around.

The M wheels will not work properly on the 96 but should on the 97, The 97 has the same rear width as the M, which is about an inch to an inch and half wider than the 96. My 97 2.8 that I ordered with the 17 inch wheels were the same rim width as the M.
